Lemony Chickpea Salad

Ingredients
  • 14 cup olive oil

  • 1 lemon

  • 1 tbsp Greek Dressing Mix, or Spinach Dip Mix

  • 1 can (14 oz/ 398 ml) chickpeas, rinsed and drained

  • 1 small red or green bell pepper, diced

  • 1 small onion, finely diced

  • 1 radish, optional

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Whisk together olive oil, lemon juice and dressing mix in a mixing bowl.

  • Add chickpea, peppers, onions, and radish, tossing to coat. Season to taste with salt and pepper. Serve at room temperature.
