Ingredients
1⁄4 cup olive oil
1 lemon
1 tbsp Greek Dressing Mix, or Spinach Dip Mix
1 can (14 oz/ 398 ml) chickpeas, rinsed and drained
1 small red or green bell pepper, diced
1 small onion, finely diced
1 radish, optional
Sea Salt, to taste
Black Pepper, to taste
Preparation
Whisk together olive oil, lemon juice and dressing mix in a mixing bowl.
Add chickpea, peppers, onions, and radish, tossing to coat. Season to taste with salt and pepper. Serve at room temperature.
