Ingredients
  • 12 slices baguette or gluten-free bread

  • olive oil, for brushing

  • 4 medium tomatoes, diced

  • 1 recipe prepared Le Taj Sauce

  • 1 tbsp Toasted Onion

  • 12 cup low-fat goat cheese, crumbled

Instructions
  • Place baguette slices on a Sheet Pan lined with a Sheet Pan Liner. Using a basting brush, lightly brush with oil. Broil until golden, approximately 2 minutes each side.

  • In a medium bowl, combine tomatoes, sauce, and Toasted Onion. Mound 1 tbsp of mixture onto each baguette slice.

  • Sprinkle with goat cheese, and place under broiler until cheese is lightly golden, 2–3 minutes.
