Layered Kale & Veggie Salad

A lunch or dinner worthy side that can also be beautifully layered in a mason jar. Simply put dressing on the bottom of the jar and layer, shake, and enjoy.

Ingredients

  • 4 cups shredded kale
  • 1 cup cherry tomatoes
  • 12 cucumber, sliced
  • 14 small red onion, thinly sliced
  • 1 bell pepper, sliced
  • 14 cup prepared Balsamic Vinaigrette, or dressing of your choice
  • 14 cup crumbled feta cheese

Preparation

  1. In a large serving bowl, layer the first six ingredients.
  2. Top with feta and serve.
