Lamb Chops with Sauce

Ingredients

  • 1 tbsp vegetable oil
  • 4 (3.5 oz/100g) shoulder lamb chops
  • 2 tsp Souvlaki Seasoning
  • 1 tbsp lemon juice
  • 4 ripe tomatoes, chopped
  • 14 cup red wine, optional
  • 1 recipe prepared El Greco Finishing Sauce, or sauce of your choice

Preparation

  1. In a mixing bowl, combine lamb, lemon juice, and seasoning.
  2. Heat a fry pan over medium-high heat. Add oil and sauté lamb chops for 4–6 minutes on each side or until cooked to taste. Remove from pan and set aside. Add tomatoes and wine to the pan and cook until tomatoes are soft.
  3. Arrange lamb chops on a platter, top with tomato-wine mixture, and drizzle with sauce.
