Kale Chickpea Layered Greek Salad
A Greek-inspired salad ready in only 10 minutes.
Ingredients
2 cups shredded kale
1 cup cherry tomatoes
1⁄2 cucumber, sliced
1⁄4 small red onion, thinly sliced
3 tbsp Greek Dressing, prepared
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
1 can (19 oz /540 ml) chick peas, drained and rinsed
1 recipe prepared Pesto Sauce
2 tbsp Pesto Sauce Mix
2 tbsp water
2 tbsp pine nuts or pistachio nuts, optional
1 tbsp grated Parmesan cheese
1⁄4 cup olive oil
1⁄4 - 1⁄2 cup crumbled feta cheese
Sea Salt, optional
Black Pepper, optional
Preparation
In a large serving bowl, mix the first six ingredients together.
In a second bowl, toss chick peas with sauce and layer over salad mixture.
Top with feta, season, and serve.
