Kale Chickpea Layered Greek Salad

A Greek-inspired salad ready in only 10 minutes.

Ingredients

  • 2 cups shredded kale
  • 1 cup cherry tomatoes
  • 12 cucumber, sliced
  • 14 small red onion, thinly sliced
  • 3 tbsp Greek Dressing, prepared
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 1 can (19 oz /540 ml) chick peas, drained and rinsed
  • 1 recipe prepared Pesto Sauce
  • 2 tbsp Pesto Sauce Mix
  • 2 tbsp water
  • 2 tbsp pine nuts or pistachio nuts, optional
  • 1 tbsp grated Parmesan cheese
  • 14 cup olive oil
  • 14 - 12 cup crumbled feta cheese
  • Sea Salt, optional
  • Black Pepper, optional

Preparation

  1. In a large serving bowl, mix the first six ingredients together.
  2. In a second bowl, toss chick peas with sauce and layer over salad mixture.
  3. Top with feta, season, and serve.
