Italian-style Fish Fillets with Pesto

Fish in a flash – a gorgeous, healthy dinner ready in 20 minutes.

Ingredients

  • 2 tbsp olive oil, divided
  • 1 lb (450 g) fish fillets
  • Black Pepper, to taste
  • 12 cup diced tomatoes
  • 2 tsp Pesto Sauce Mix

Preparation

  1. Heat 1 tbsp oil in a frying pan over medium-high heat.
  2. Lightly season fish with Black Pepper and place in pan.
  3. Combine tomatoes, Pesto Sauce Mix and remaining oil in a small mixing bowl. Spoon over fillets.
  4. Cover pan and cook for 8–10 minutes, or until fish is opaque.
