Italian-style Fish Fillets with Pesto

Ingredients
  • 2 tbsp olive oil, divided

  • 1 lb (450 g) fish fillets

  • Black Pepper, to taste

  • 12 cup diced tomatoes

  • 2 tsp Pesto Sauce Mix

Instructions
  • Heat 1 tbsp oil in a frying pan over medium-high heat.

  • Lightly season fish with Black Pepper and place in pan.

  • Combine tomatoes, Pesto Sauce Mix and remaining oil in a small mixing bowl. Spoon over fillets.

  • Cover pan and cook for 8–10 minutes, or until fish is opaque.
