This pasta salad is an easy way to feed a whole crowd—it’s the perfect dish to bring to a summer BBQ to serve alongside grilled or roast chicken. Choose your favourite dressing and make this dish your own! There are mounds of veggies round out the meal, like bell peppers, which are an excellent source of vitamins and minerals.
Ingredients
3⁄4 cup prepared Balsamic Dressing or Greek Dressing
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
1 red bell pepper, coarsely diced
1 green bell pepper, coarsely diced
2 cups halved cherry tomatoes
1 cup cubed mozzarella cheese
4 cups bite-sized pasta, your choice
2 cups steamed broccoli florets
Sea Salt, to taste
Black Pepper, to taste
Preparation
Cook pasta to desired doneness.
In a large mixing bowl, whisk dressing. Add peppers, cherry tomatoes, mozzarella, pasta and broccoli and toss to coat.
