Italian Egg Drop Soup (Stracciatella)
Stracciatella (strah-CH'YAH-the-lah) means "little rags". When you add the egg and Parmesan mixture, it makes rag-like shreds of dough that are cooked in broth.
Ingredients
6 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
Sea Salt, to taste
Black Pepper, to taste
2 large eggs
1⁄4 cup grated Parmesan cheese
2 tsp SPG Seasoning
Preparation
Bring Chicken Broth to boil in a large Multipurpose Pot. Season to taste with Salt and Pepper.
In a small mixing bowl, whisk eggs, grated Parmesan cheese and SPG Seasoning.
Reduce temperature to a simmer. Using a fork, slowly stir egg mixture into simmering broth. Continue to stir until egg floats to the top. Serve immediately.
