Italian Egg Drop Soup (Stracciatella)

Stracciatella (strah-CH'YAH-the-lah) means "little rags". When you add the egg and Parmesan mixture, it makes rag-like shreds of dough that are cooked in broth.

Ingredients

  • 6 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 large eggs
  • 14 cup grated Parmesan cheese
  • 2 tsp SPG Seasoning

Preparation

  1. Bring Chicken Broth to boil in a large Multipurpose Pot. Season to taste with Salt and Pepper.
  2. In a small mixing bowl, whisk eggs, grated Parmesan cheese and SPG Seasoning.
  3. Reduce temperature to a simmer. Using a fork, slowly stir egg mixture into simmering broth. Continue to stir until egg floats to the top. Serve immediately.
