Italian Chicken & Veggies
Need a rush job? Count on the microwave for this one dish flavour-buster that goes from microwave to table in about 15 min. Al Fresco on the fly!
Ingredients
1 medium sweet potato
2 tbsp olive oil, divided
2 tbsp Italian Seasoning or Bruschetta Seasoning, divided
1 lb (450 g) boneless, skinless chicken breasts
2 bell peppers
2 cups broccoli florets
Preparation
Chop sweet potato and place in Multipurpose Steamer. Coat with 1 tbsp each olive oil and seasoning. Cover and microwave on high 4 min.
Meanwhile, place chicken breasts in a large bowl; coat with remaining oil and seasoning. Place on multipurpose tray and set aside. Chop peppers.
Add peppers and broccoli to steamer; stir to combine. Top with chicken on tray. Cover and microwave on high until veggies are tender and chicken is cooked through, about 10 min.
Carefully remove tray with chicken. Thickly slice chicken and serve with veggies.
