Italian Chicken and Cheese Casserole
Thanks to the cooked tomatoes in the marinara sauce, this recipe is a great source of lycopene, an anti-cancer pigment.
Ingredients
2 cups soft breadcrumbs
1 tbsp Herb & Garlic Dip Mix
1 tbsp 3 Onion Dip Mix
4 boneless chicken breasts
3 tbsp vegetable oil
2 cups Marinara Sauce
1 can (28 oz/796 ml) diced tomatoes
1 can (28 oz/796 ml) crushed tomatoes
3 tbsp Marinara Sauce Mix
1 cup grated low-fat mozzarella cheese
Preparation
Preheat oven to 325° F (160° C).
Combine breadcrumbs with Herb & Garlic Dip Mix and 3 Onion Dip Mix in a bag. Add chicken, shaking well to coat.
Heat oil in frying pan over medium-high heat. Brown chicken well on both sides.
Add Marinara Sauce. Cover with mozzarella and bake, uncovered, for 45 minutes.
