Thanks to the cooked tomatoes in the marinara sauce, this recipe is a great source of lycopene, an anti-cancer pigment.

Ingredients

  • 2 cups soft breadcrumbs
  • 1 tbsp Herb & Garlic Dip Mix
  • 1 tbsp 3 Onion Dip Mix
  • 4 boneless chicken breasts
  • 3 tbsp vegetable oil
  • 2 cups Marinara Sauce
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 3 tbsp Marinara Sauce Mix
  • 1 cup grated low-fat mozzarella cheese

Preparation

  1. Preheat oven to 325° F (160° C).
  2. Combine breadcrumbs with Herb & Garlic Dip Mix and 3 Onion Dip Mix in a bag. Add chicken, shaking well to coat.
  3. Heat oil in frying pan over medium-high heat. Brown chicken well on both sides.
  4. Add Marinara Sauce. Cover with mozzarella and bake, uncovered, for 45 minutes.
