Italian Bean and Pasta Soup
Ingredients
2 cups tomato sauce
4 cups Vegetable Broth, your choice, prepared
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
1 tbsp Balsamic Vinaigrette Dressing Mix
1 can (19 oz/540 ml) white beans, drained and rinsed
1⁄2 cup ruote, elbow macaroni, or other pasta
Sea Salt, to taste
Black Pepper, to taste
grated Parmesan cheese, optional
Preparation
Combine first 5 ingredients in a Multipurpose Pot and bring to a boil. Reduce heat, cover and simmer slowly for 20 minutes, stirring frequently.
Season with Salt and Pepper. Serve in large bowls and top with Parmesan.
