Italian Bean and Pasta Soup

Ingredients

  • 2 cups tomato sauce
  • 4 cups Vegetable Broth, your choice, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 tbsp Balsamic Vinaigrette Dressing Mix
  • 1 can (19 oz/540 ml) white beans, drained and rinsed
  • 12 cup ruote, elbow macaroni, or other pasta
  • Sea Salt, to taste
  • Black Pepper, to taste
  • grated Parmesan cheese, optional

Preparation

  1. Combine first 5 ingredients in a Multipurpose Pot and bring to a boil. Reduce heat, cover and simmer slowly for 20 minutes, stirring frequently.
  2. Season with Salt and Pepper. Serve in large bowls and top with Parmesan.
