Irish Lamb Stew
This deliciously cozy recipe features tender chunks of lamb, potatoes, and carrots in a rich red wine infused broth. It’s sure to impress at less than $2 a serving!
Ingredients
1 1⁄2 lbs diced lamb
Sea Salt, to taste
Black Pepper, to taste
2 tbsp vegetable oil
1 large onion, diced
2 tbsp Rosemary Garlic Seasoning
2 tsp Minced Garlic
1⁄2 cup red wine
6 cups Vegetable Broth
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
2 large carrots, cut into large chunks
4 medium potatoes, cut into large chunks
Preparation
Season lamb with Salt and Pepper. Preheat frying pan to high, add 1 1⁄2 tbsp vegetable oil and brown lamb on all sides.
Heat Multipurpose Pot to medium. Add remaining vegetable oil and sauté onions for about 5 minutes, being careful not to brown. Stir in lamb seasoning and Minced Garlic.
Pour red wine into pot, stir vigorously and reduce by half. Add Vegetable Bouillon and browned lamb and heat until simmering.
Add carrots and potatoes, cover and gently simmer until vegetables are tender, about 45 minutes. Season to taste and serve.
