Ingredients
8 eggs
2 tbsp Guacamole Dip Mix
1⁄4 cup water
2 tsp oil
4 small whole-grain or corn tortillas
1 cup canned black beans
2 cups prepared Poco Picante Salsa
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
1⁄4 cup grated low-fat cheese, your choice
Preparation
In mixing bowl, whisk eggs with dip mix and water and set aside.
Heat oil in a fry pan over medium heat. Add egg mixture. Stir constantly for 5–6 min or until eggs are set.
Microwave tortillas until warm and place on individual plates. Meanwhile drain and rinse black beans.
Top each tortilla with egg mixture and black beans, add salsa and cheese. Fold over or roll up and serve immediately.
