Ingredients
  • 1 pkg Huevos Rancheros Seasoning

  • 1 can (14 oz/398 ml) crushed tomatoes

  • 1 can (19 oz/540 ml) black beans, drained and rinsed

  • 1 cup water

  • 6 eggs

  • 1 cup grated cheese

Instructions
  • In a fry pan set over medium-high heat, combine seasoning with tomatoes, black beans, and water.

  • Bring to a boil over high heat, stirring often. Reduce heat to medium-low; cover and simmer for 5–8 min.

  • Make a small indentation in sauce for each egg; crack in 6 eggs. Cover and simmer for 8–10 more min or until eggs are set. Add cheese for the last 2 min of cooking.

  • Serve with toppings, as desired.
