Hot Black Bean Dip Wraps

A great lunchtime solution!

Ingredients

  • 2 large tomatoes
  • 4 tbsp Poco Picante Salsa Mix or Red Garlic Topper Blend
  • 2 tsp lime juice
  • cilantro, optional, to taste
  • 1 can (19 oz/540 ml) black beans, drained and rinsed
  • 23 cups cold water
  • 3 tbsp Chili Seasoning or Chipotle Aioli Mix
  • 1 tbsp lime juice
  • 8 small whole-grain or corn tortillas
  • 4 cups mixed greens
  • 2 cups grated mozzarella or cheddar cheese

Preparation

  1. Dice tomatoes. Stir in salsa mix, lime juice and cilantro, if desired.
  2. Meanwhile, in a food processor, combine beans, water, dip mix, and lime juice. Blend until smooth.
  3. Spread Black Bean Dip on each tortilla. Top with salsa, greens and cheese. For each wrap, fold two sides of wrap over filling, then roll tightly, ending seam side down.
  4. Place 4 wraps in bottom of Multipurpose Steamer. Sprinkle with extra cheese, if desired. Gently place Multipurpose Tray on top; arrange remaining wraps on tray and sprinkle with more cheese, if desired. Microwave until warm, for 1-2 min.

Tips

Have extra time? Line a Sheet Pan with a Sheet Pan Liner. Place wraps seam-side down on pan and toast for 10 mins at 350° F.
