Ingredients
1 pkg Pancake & Waffle Mix
1 egg
1 cup milk, your choice
2 tbsp oil
1 tsp vanilla extract
1 recipe prepared Home-Style Chicken Stew, reheated
1 pkg Home-Style Chicken Stew Seasoning
2 1⁄2 cups water, divided
2 cups cubed potatoes
1 cup diced carrots
1 cup diced celery
1 tbsp oil
1 lb (450 g) boneless, skinless chicken, cut into bites
1 cup frozen peas
Preparation
In a large bowl, whisk mix with egg, milk, oil, and vanilla extract. Let batter rest 5 min; it will continue to thicken. Follow waffle maker instructions.
When cooked place waffles on plates.
Top each with a scoop of warm stew.
