Holiday Peas

There’s always that compulsory vegetable side dish at every holiday gathering. It’s usually green, overcooked, and ignored. Not to single out a single vegetable *cough* green beans, but here we’ve got a festive veggie dish that will have everyone saying “pass the peas, please!”.

Ingredients
  • 2 shallots

  • 1 garlic clove

  • 1 tbsp oil

  • 1 tbsp Holiday Seasoning

  • 4 cups frozen peas

  • 13 cup prepared Vegetable Broth

  • 1 12 tsp Vegetable Broth Mix

  • 1 cup boiling water

Instructions
  • Thinly slice shallots. Mince garlic.

  • Heat oil in a large skillet over medium heat. Add shallots and garlic; sprinkle with seasoning. Stir often until soft, 4–5 min.

  • Add peas and broth. Simmer until peas absorb most of the broth and are heated through, 2 min. Drain any excess liquid, if needed.

Tips
