Hearty Minestrone
Ingredients
1⁄2 cup uncooked small shell pasta
3 cups hot water or broth
1 pkg Hearty Minestrone Seasoning
1 can (28 oz/796 ml) diced tomatoes
1 can (19 oz/540 ml) lentils
2 cups frozen mixed vegetables, your choice
Preparation
In a large sauté pan over high heat, combine pasta and hot water.
Stir in seasoning and diced tomatoes. Cover; bring to a boil. Reduce heat to medium and simmer uncovered for 10 min.
Meanwhile, drain and rinse lentils. Stir into soup with mixed vegetables.
Simmer 3 min. Serve with pesto, if desired.
