Hearty Minestrone

Ingredients

  • 12 cup uncooked small shell pasta
  • 3 cups hot water or broth
  • 1 pkg Hearty Minestrone Seasoning
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (19 oz/540 ml) lentils
  • 2 cups frozen mixed vegetables, your choice

Preparation

  1. In a large sauté pan over high heat, combine pasta and hot water.
  2. Stir in seasoning and diced tomatoes. Cover; bring to a boil. Reduce heat to medium and simmer uncovered for 10 min.
  3. Meanwhile, drain and rinse lentils. Stir into soup with mixed vegetables.
  4. Simmer 3 min. Serve with pesto, if desired.
