Hearty Minestrone Zuppa

Ingredients

  • 2 cups tomato sauce
  • 6 cups Nourish Broth, or broth of your choice, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 2 celery stalks, sliced
  • 2 carrots, finely diced
  • 1 tbsp 3 Onion Dip Mix
  • 2 tsp Balsamic Vinaigrette Dressing Mix
  • 1 can (14 oz /398 ml) kidney beans, drained and rinsed
  • 12 cup whole-wheat pasta
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 14 cup grated Parmesan cheese, optional

Preparation

  1. Combine tomato sauce and prepared Bouillon in Multipurpose Pot. Bring to a boil over high heat. Reduce temperature to medium high.
  2. Add next 4 ingredients and simmer for 30 min.
  3. Stir in kidney beans and pasta. Cover and bring to a boil for 10 min, stirring twice, or until pasta is tender. Season to taste with Sea Salt & Pepper.
  4. Sprinkle individual servings with grated Parmesan cheese, if desired.
