Ingredients

  • 2 boneless, skinless chicken breasts, sliced in half lengthwise to create 4 thin cutlets
  • 2 - 3 tbsp Honey Mustard or Sweet & Spicy Mustard or Dijon-style mustard
  • 4 slices Swiss cheese
  • 14 cup BBQ Sauce
  • pickled red onions, prepared, to taste
  • 4 hamburger buns

Preparation

  1. Coat chicken breast halves with mustard on both sides and set aside.
  2. Preheat grill to medium and cook chicken with lid closed for approximately 4–6 min per side or until cooked through and chicken has reached a Food Safe internal temperature of 165° F. Top each with a cheese slice during the last two minutes of cooking.
  3. Spread one half of the buns with barbecue sauce, top with chicken breasts.
  4. Top chicken breast with pineapple, onions, your favorite toppings, close buns and serve.
