Harissa Chicken Vegetable Stir-fry

Ingredients

  • 2 boneless chicken breasts diced
  • 12 cup Harissa sauce
  • 2 tbsp olive oil
  • 4 cups mixed summer vegetables (such as bell peppers, zucchini, carrots, spinach, kale, celery, cherry tomatoes)
  • 1 tbsp Asian Stir-Fry Seasoning
  • 12 cup Vegetable Broth, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Combine chicken and Harissa in a bowl.
  2. Heat a Wok over medium high heat. Add olive oil, and chicken Harissa mixture. Cook for 6–7 minutes, stirring regularly, keeping covered between stirring until chicken is cooked.
  3. Add vegetables, Asian Stir-fry Seasoning, and Bouillon, season with Sea Salt and Black Pepper to taste, keeping covered between stirring, and stir-fry until brightly coloured crisp and tender, about 5 minutes.
