If you’re not the biggest fan of turkey for the holidays but still crave that comforting, festive flavour, this one’s for you. Faster than cooking the whole bird, stuffed chicken can bring both your poultry and stuffing game up a notch. It’s also a great way to breathe a new life into leftovers after the big feast.

Ingredients

  • 1 cup prepared Happy Holidays Stuffing or Sage & Apple Stuffing
  • 6 slices dried or day-old bread, or 6 cups croutons
  • 2 celery stalks
  • 2 tbsp unsalted butter
  • 1 pkg Happy Holidays Stuffing Seasoning
  • 2 cups boiling water
  • 2 celery stalks
  • 1 small apple
  • 6 cups cubed day-old bread
  • 2 tbsp Sage & Apple Stuffing Seasoning
  • 1 cup Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 12 tsp Sea Salt, optional
  • 1 lb (450 g) boneless, skinless chicken breasts , about 2
  • 1 tbsp oil
  • Sea salt and black pepper, to taste
  • 1 cup prepared Savoury Herb Gravy
  • 2 tbsp Savoury Herb Gravy Mix
  • 1 cup cold water

Preparation

  1. Preheat oven to 425° F. Line 1⁄4 Sheet Pan with 1⁄4 Sheet Pan Liner. Divide stuffing in half and softly squeeze into two oblong balls; set aside.
  2. Carefully cut into the thick part of the breast to make a pocket. Fill each pocket with a stuffing ball. Secure with toothpicks or tie with kitchen twine.
  3. Place chicken on pan; brush tops with oil, then season with salt and pepper.
  4. Roast for 35 min. Rest 5 min, then remove toothpicks or twine. Slice chicken into thick rounds. Drizzle with gravy.
