Ground Beef Pita Pizzas

Don’t let the list of ingredients scare you off, the most difficult part of this recipe is cooking ground beef. This meal is fast, easy, and kids love it as a lunchbox meal. Make it fun and let them assemble the pizzas themselves. Simply wrap the pita in foil or plastic wrap and pack the beef, cut-up veggies, and yogurt sauce in separate containers.

Ingredients

  • 2 tsp oil
  • 1 lb (450 g) lean ground beef
  • 2 tbsp water
  • 1 tbsp + 1 tsp 3 Onion Dip Mix or Greek Dressing Mix, divided
  • 1 tbsp tomato paste
  • 12 cup plain yogurt
  • 4 pitas
  • 1 tomato
  • 12 English cucumber
  • 14 small red onion
  • 13 cup crumbled feta cheese, optional

Preparation

  1. In Wok, heat oil over medium-high. Crumble in beef. Add water, 1 tbsp dressing mix, and tomato paste. Cook 5–6 min, breaking up large chunks as needed.
  2. In a small bowl, combine yogurt and remaining 1 tsp dressing mix.
  3. Dice tomato and cucumber. Thinly slice onion.
  4. Place pitas in Multipurpose Steamer. Cover; microwave on high 1–2 min until warm.
  5. Spread about 2 tbsp yogurt over each pita; top with beef, vegetables, and feta, if desired.
