Grilled Refried Bean Quesadillas
Ingredients
4 tortillas, warmed
1 can (14 oz/ 398 ml) refried beans
1 cup Poco Picante Salsa, prepared
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
1⁄2 - 1 cup grated low-fat cheddar cheese
Preparation
Place the tortillas in a grill pan over medium heat.
Place refried beans and Salsa on one half of each tortilla, top with cheese and fold in half. Repeat with each tortilla. Grill for approximately 1–2 minutes per side until cheese melts.
Remove from heat and slice each into halves. Serve.
