In a large bowl, whisk together seasoning and oil. Cut chicken into 1” cubes. Add chicken to bowl; stir to evenly coat.
Using 4-in-1 Mandoline, fitted with 3.5 mm slicer plate, slice zucchini into ribbons. Season with salt and pepper. Thread meat and zucchini onto skewers.
Place skewers on grill; rotate often until lightly charred and chicken is cooked through, 10–12 min.
