Grilled Chicken Summer Salad
This recipe is a great balance of fresh veggies and protein, important for building and repairing your body.
Ingredients
4 cups seasonal greens
1 recipe prepared Summer Layered Salad
1 cup matchstick carrots
1 cup sliced celery
4 cups mixed greens
1 cup diced English cucumber, skin on
12 cherry tomatoes, sliced in half
1⁄4 cup Balsamic Vinaigrette
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
1 recipe prepared Lime Grilled Chicken
1⁄2 cup lime juice
2 tbsp honey
2 tbsp Herb & Garlic Dip Mix or Italian Seasoning
1⁄4 cup oil
4 boneless, skinless chicken breasts
Preparation
Place 1 cup salad greens in each bowl.
Top with Layered Summer Salad and chicken. Serve.
