Ingredients

  • 8 cups roasted veggies
  • 2 cups cooked grains, such as rainbow quinoa
  • 2 cups chickpeas, cooked or canned, drained and rinsed
  • 2 hardboiled eggs
  • 12 avocado, quartered
  • 12 cup Balsamic Vinaigrette Dressing or Sesame Ginger Dressing
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 2 tbsp Sesame Ginger Dressing Mix
  • 3 tbsp low sodium soy sauce or gluten free soy sauce
  • 13 cup oil
  • 12 cup rice vinegar

Preparation

  1. Arrange first five ingredients in four serving bowls.
  2. Drizzle with dressing and serve.
