Ingredients
2 green onions
1 English cucumber
1⁄2 head small green cabbage
1 cup prepared Super Greens Pesto
1 pkg Super Green Pesto Seasoning
4 cups packed baby spinach, arugula, or kale
1 cup extra virgin olive oil
1⁄4 cup unsalted nuts or seeds of your choice
Instructions
Chop green onions. Dice cucumber and cabbage; place in a very large bowl. Toss with pesto until well combined.
Serve with chips for dunking, as a side salad, or as a sandwich filling.
