Ingredients
12 slices thin-cut deli ham
8 eggs
1⁄2 cup prepared Super Green Pesto
1 pkg Super Green Pesto Seasoning
4 cups packed baby spinach, arugula, or kale
1 cup extra virgin olive oil
1⁄4 cup unsalted nuts or seeds of your choice
1⁄2 cup grated cheddar cheese
Preparation
Preheat oven to 400° F. Lightly brush two Muffin Makers with oil and place on Sheet Pan.
Line each Muffin Maker cavity with a slice of ham. The bottom and sides should be covered.
In a large bowl, whisk eggs with pesto. Carefully pour egg mixture over ham in muffin cavities.
Bake 15 min, or until eggs are set. Let cool slightly before removing bites from muffin cavities.
