Green Beans with Almonds

Green beans are an excellent source of fibre, folate and potassium. In small amounts, almonds provide valuable monosaturated fats.

Ingredients
  • 1 12 lb (775 g) green beans, trimmed

  • 2 tbsp butter

  • 3 tbsp sliced almonds, toasted

  • 2 tsp lemon juice

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Bring a large pot of salted water to a boil. Add green beans and return to a boil for 3 minutes. Drain and set aside.

  • While beans are cooking, melt butter in a frying pan. Add sliced almonds and stir until nuts are golden, about 4–5 minutes.

  • Add green beans and lemon juice to pan, stirring to coat. Season to taste with Salt and Pepper.
