Green Bean and Potato Salad

Ingredients

  • 12 lb (225 g) green beans, steamed or boiled, then cooled
  • 2 large potatoes, boiled, cooled, and cut into bite-sized pieces
  • 1 large tomato, cut into wedges, or 1 cup halved cherry tomatoes
  • 14 cup olive oil
  • 1 tbsp Montreal Steak Rub or Red Garlic Topper
  • 12 cup corn, optional
  • 1 tbsp balsamic vinegar

Preparation

  1. Combine first 6 ingredients in a large bowl. Allow to marinate for at least 1 hour for all flavours to combine.
  2. Immediately before serving, splash balsamic vinegar overtop and gently toss.
