Green Bean and Potato Salad
Ingredients
1⁄2 lb (225 g) green beans, steamed or boiled, then cooled
2 large potatoes, boiled, cooled, and cut into bite-sized pieces
1 large tomato, cut into wedges, or 1 cup halved cherry tomatoes
1⁄4 cup olive oil
1 tbsp Montreal Steak Rub or Red Garlic Topper
1⁄2 cup corn, optional
1 tbsp balsamic vinegar
Preparation
Combine first 6 ingredients in a large bowl. Allow to marinate for at least 1 hour for all flavours to combine.
Immediately before serving, splash balsamic vinegar overtop and gently toss.
