Ingredients

  • 1 small red onion, cut in half, then sliced
  • 1 English cucumber, cut in quarters lengthwise and sliced in 1" cubes
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 4 tomatoes, cut in wedges
  • 1 cup Greek olives
  • 1 cup crumbled Feta cheese
  • 12 cup olive oil
  • 2 tbsp lemon juice or red wine vinegar
  • 1 garlic clove, crushed
  • 2 tsp Greek Dressing Mix
  • 1 tsp dried mint
  • Sea Salt - Grinder, to taste
  • Black Pepper - Grinder, to taste

Preparation

  1. Whisk together all dressing ingredients.
  2. Add all vegetables, Greek olives and Feta cheese, toss gently and serve immediately.
