Greek Roasted Pork Chops
This low-carb, nutritious, tasty meal is an easy pleaser. You can marinate chops in the fridge up to 6 hours ahead, or freeze a double batch for an easy meal next week.
Ingredients
4 (4 oz/112 g) pork chops
3⁄4 cup Greek Dressing, prepared, divided
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Preparation
Preheat oven to 400° F (205° C).
Place chops and 1⁄2 cup Greek Dressing in a sealable freezer bag. Turn several times to coat chops evenly.
Discard marinade, and place chops on a Sheet Pan lined with a Sheet Pan Liner. Roast until cooked through, approximately 10–15 minutes. Alternatively, grill chops over medium-high heat, turning once, for approximately 8–10 minutes. Brush with remaining Greek Dressing during last 2 minutes of cooking.
Let chops rest for 5 minutes before serving.
