Greek Pork
Ingredients
1 lb (450 g) pork tenderloin
1⁄2 cup Balsamic Vinaigrette Dressing or Greek Dressing, prepared
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
1 tbsp Lemon Dilly Dip Mix or Souvlaki Seasoning
Preparation
Preheat oven to 400° F (205° C).
Place tenderloin and 1⁄4 cup dressing in a resealable freezer bag. Turn several times to coat evenly.
Discard marinade, and place pork in an oven-proof dish. Sprinkle with dip mix. Roast until cooked through, approximately 20–30 minutes. Brush with remaining dressing during last 2 minutes of cooking.
Let rest for 5 minutes before slicing.
