Ingredients

  • 1 cup plain 2% Greek yogurt
  • 12 cup grated cucumber
  • 1 12 tbsp Lemon Dilly Dip Mix or Greek Dressing Mix
  • 1 cup uncooked couscous
  • 2 cups boiling water, plus more if needed
  • 2 tbsp olive oil
  • 12 tsp Herbed Garlic Sea Salt Blend or sea salt
  • 1 recipe prepared Greek Roasted Pork Chops, cooked and cut into bite-sized pieces
  • 4 (4 oz/112 g) pork chops
  • 34 cup Greek Dressing, prepared, divided
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 medium tomatoes, thinly sliced
  • 12 medium English cucumber, thinly sliced
  • 4 whole-wheat pitas, warmed

Preparation

  1. In a mixing bowl, using Piano Wire Whisk, whisk Tzatziki ingredients. Store in fridge.
  2. In a heat-safe bowl, stir couscous with boiling water. Cover and let couscous absorb water, approximately 5 min. Fluff with a fork, and check couscous is cooked to taste. If needed, add another 1⁄2 cup boiling water, and allow to absorb. Season with oil and sea salt.
  3. In a heat-safe dish, reheat pork for approximately 10 minutes in a 350° F oven, or microwave on medium for 5 min.
  4. To assemble, divide and top each pita with couscous, pork, tomatoes, cucumber, and Tzatziki. Roll up or serve open-faced.
