Greek Pasta Salad with Feta and Olives

An easy, quick summer pasta salad full of fresh peppers, briny olives, creamy feta, and tangy artichokes. It all comes together with the BEST Greek salad dressing. Perfect to serve at a Greek-inspired dinner!

Ingredients

  • 12 oz (375 g) bow-tie pasta or other bite-sized pasta
  • 1 cup Kalamata olives, pitted
  • 14 cup crumbled feta cheese
  • 1 red pepper, diced or sliced
  • 1 green pepper, diced or sliced
  • 2 jars (6 oz/177 ml) marinated artichokes, coarsely chopped, marinade reserved
  • 1 recipe prepared Greek Dressing
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • Black Pepper, to taste

Preparation

  1. Cook pasta according to package directions.
  2. Place pasta, olives, feta and peppers into a large stainless-steel bowl.
  3. Add artichokes with marinade and Greek Dressing to pasta salad.
  4. Season to taste with freshly ground Black Pepper and serve.
