Greek Inspired Ratatouille
Ingredients
1 large eggplant, chopped
1 pkg Chicken Souvlaki Seasoning or Rotisserie Chicken Seasoning
3 firm, ripe tomatoes, cut into wedges
1 tbsp lemon juice
2 tbsp olive oil
Sea Salt, to taste
Black Pepper, to taste
Preparation
Combine first three ingredients in a Rectangular Steamer. Cover and microwave on high for 10 minutes.
Mix in lemon juice and olive oil. Season to taste.
