Ingredients
  • 1 large eggplant, chopped

  • 1 pkg Chicken Souvlaki Seasoning or Rotisserie Chicken Seasoning

  • 3 firm, ripe tomatoes, cut into wedges

  • 1 tbsp lemon juice

  • 2 tbsp olive oil

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Combine first three ingredients in a Rectangular Steamer. Cover and microwave on high for 10 minutes.

  • Mix in lemon juice and olive oil. Season to taste.
