Go wild with veggies and Greek flavour with this easy-to-make power bowl. It’s perfect to use up any leftovers after a delicious Greek-inspired meal. Take it to work or school for a satisfying lunch.

Ingredients

  • 1 cup mixed greens
  • 14 recipe prepared Classic Greek Salad
  • 2 English cucumbers
  • 2 bell peppers
  • 12 small red onion
  • 1 pint cherry tomatoes
  • 12 cup pitted Kalamata olives
  • 12 cup crumbled low-fat feta cheese
  • 14 cup Greek Dressing or Balsamic Vinaigrette, prepared
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 4 oz (12 cup) Chicken Souvlaki, cubed and cooked
  • 1 yellow bell pepper
  • 1 small red onion
  • 2 lbs (900 g) boneless, skinless chicken breast fillets
  • 2 cups cherry tomatoes
  • 2 tbsp each lemon juice and olive oil
  • 1 pkg Chicken Souvlaki Seasoning
  • 8 pitas, optional
  • 12 cup cooked chickpeas

Preparation

  1. In a serving bowl, arrange greens, salad, chicken, and chickpeas and serve.
