Greek Chicken & Veggies
Ingredients
2 bell peppers
1 large head of broccoli
1 tomato
1 tbsp Spinach Dip Mix
1 lb (450 g) boneless, skinless chicken breasts
1 1⁄2 tbsp Lemon Dilly Dip Mix, divided
1 cup 2% Greek yogurt
Preparation
Dice peppers. Coarsely chop broccoli. Cut tomato into wedges. Place all veggies in Multipurpose Steamer. Sprinkle with Spinach Dip Mix; stir to coat.
Cut chicken into four pieces. Place on top of veggies; sprinkle with 1⁄2 tbsp Lemon Dilly Dip Mix.
Cover; microwave on high 5 min or until veggies are tender and chicken is cooked through.
Meanwhile, in small bowl, combine yogurt with remaining 1 tbsp Lemon Dilly Dip Mix.
Place chicken and veggies on plates. Top each with a dollop of yogurt sauce.
