Golden Couscous
A flavourful side that just might outshine the rest of the meal!
Ingredients
2 1⁄4 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 tsp Spanish saffron
1 tbsp fresh lemon juice
1 tsp fresh lemon zest
1⁄2 tsp cumin (ground)
1 garlic clove, crushed
1⁄4 cup golden raisins
1 1⁄2 cup instant couscous
Sea Salt, to taste
Black Pepper, to taste
Preparation
Combine first 8 ingredients in a Multipurpose Pot and bring to a boil. Simmer 5 minutes. Remove from heat.
Stir in couscous, cover and let stand 10 minutes. Fluff gently with fork. Season to taste with Sea Salt and Pepper.
