Ingredients

  • 1 cup rice
  • 2 cups water
  • 8 cups romaine lettuce, chopped
  • 12 red onion, diced
  • 4 cups frozen edamame, thawed
  • 1 cup cilantro, chopped
  • 2 bell peppers, chopped
  • 3 tbsp peanuts, crushed
  • 14 cup tahini
  • 2 tbsp sweet chili sauce
  • 2 tbsp light soy sauce
  • 1 tbsp Asian Stir-Fry Seasoning
  • 3 tbsp warm water

Preparation

  1. In a Round or Multipurpose Steamer, combine rice and 2 cups water. Top with tray and microwave uncovered on high for 16–18 min, or until tender.
  2. Divide all other power bowl ingredients into 4 bowls or meal prep containers.
  3. In a small prep bowl, whisk all dressing ingredients until combined.
  4. Drizzle dressing over each bowl and enjoy.
