Glazed Red Pepper Jelly Drunken Salmon

What a sweet and sassy dish! Shines as a dinner for 4-6, or cut into 16 savoury bites for a tapas buffet.

Ingredients

  • 2 tbsp Red Pepper Jelly
  • 2 tbsp bourbon, whiskey, or rum
  • 1 tbsp honey
  • 12 cup melted butter
  • 1 tbsp lime or lemon juice
  • 4 - 6 (8 oz/227 g) skinless salmon fillets (or 1 whole fillet)

Preparation

  1. Preheat oven to 350° F (175° C).
  2. In a small bowl, combine all marinade ingredients, and spread over salmon. Marinate 10 minutes.
  3. Place salmon in a heat-proof serving dish.
  4. Cover and bake 15–20 minutes, depending on the thickness of the salmon, basting once or twice.
  5. Cut each fillet into bite-size pieces and arrange on a platter.
