This refreshing twist on the classic summer soup makes the perfect side salad or refreshing appetizer in cute verrines or champagne glasses. Bright, zesty, and full of fresh flavours, it's just the thing to keep cool at any outdoor gathering!

Ingredients

  • 12 pkg Gazpacho Seasoning
  • 1 cup tomato juice or vegetable cocktail, such as V8®
  • 1 tsp red wine vinegar
  • Salt & Pepper, to taste
  • 2 Roma tomatoes
  • 1 English cucumber
  • 1 large yellow pepper
  • 12 red onion

Preparation

  1. In a bowl, whisk together seasoning, tomato juice, and vinegar. Taste, then season with salt and pepper. Set aside to hydrate and let flavours blend.
  2. Cut tomatoes and cucumber in half lengthwise. Scoop out seeds; discard. Finely dice tomatoes, cucumber, pepper, and onion. Place in a large bowl; toss to combine.
  3. To serve, divide salad between bowls. Drizzle dressing overtop. Add toppings, if desired.
