Garden Veggie Family Frittata

Ingredients
  • 2 bell peppers

  • 1 yellow or green zucchini

  • 8 mixed cherry tomatoes

  • 2 tsp 3 Onion Dip Mix, or Dip Mix of your choice, divided

  • Sea Salt, to taste

  • Black Pepper, to taste

  • 6 eggs

  • 12 cup crumbled goat cheese or feta cheese

Instructions
  • Dice peppers and zucchini. Cut tomatoes in halves. Place in Round Cake Pan; season with 1 tsp mix, salt and pepper.

  • In a large bowl, whisk eggs with remaining 1 tsp dip mix.

  • Pour egg mixture over veggies; stir in cheese. Microwave, uncovered, 11–12 min, or until centre is set when pan is jiggled.

  • Cut into wedges with a silicone spatula and add toppings, if using.
