This soup was inspired by French cassoulet, a rich, slow-cooked stew, born in the sunny, Southern French countryside. This streamlined version uses fewer ingredients and is made in the microwave, so it cooks faster and has fewer dishes to clean.
Ingredients
1 pkg Coq au Vin Seasoning or Rotisserie Chicken Seasoning
1 lb (450 g) lean ground chicken
1 can (19 oz/540 ml) unsalted, white kidney beans, drained and rinsed
1 can (14 oz/398 ml) crushed tomatoes
4 cups prepared Nourish Broth or Vegetable Broth
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
3 cups mixed, frozen vegetables
Preparation
In Round Steamer, combine seasoning with chicken. Cover and microwave on high 6–7 min, or until chicken is cooked through. Use Ground Meat Separator to break up chunks.
Carefully stir in beans, tomatoes, broth, and veggies—the Steamer will be full! For easier handling, place Steamer on a large plate. Cover Steamer and microwave on high 6–7 min, or until soup is hot and veggies are soft.
